COMMON TYPES OF PEPPERS

ANAHEIM PEPPER (ALSO CALLED THE CALIFORNIA PEPPER) Anaheim pepper

The name Anaheim refers to a mild variety of the New Mexican Chili pepper. These peppers range in color from light green to dark green to red and grows between 6 to 10 inches long. The pepper ranges from 500 to 2,500 on the Scoville scale. Giving it a low to moderate heat level depending on where it was grown.

 

ANCHO PEPPER (ALSO CALLED POBLANO)Ancho Pepper

The Ancho pepper is a mild chile pepper originating in Mexico. In its fresh state it is called a Poblano pepper. It is only given the Ancho name in a dried state. The pepper ranges in color from a dark purplish green to green to red. It grows to between 3 to 6 inches long and up to 3 inches wide. Ancho peppers ranges from 1,000 to 1,500 on the Scoville scale.

BELL PEPPERBell pepper

The Bell pepper is the only pepper in the Capsicum family that does not have capsaicin(because a gene stops its production). Because of its less spicy nature It is often grouped with sweet peppers and comes in different colors; Green, red, and yellow. The Bell pepper receives a 0 on the Scoville scale.

 

CAYENNE PEPPERcayenne pepper

The Cayenne pepper is a hot chile pepper that ranges from green to red. These peppers are thin and grow up to 3 inches. This pepper is used in spicy dishes such as Szechuan cuisine, also it is used in non food items such as pepper spray. Cayenne pepper ranges from 30,000 to 50,000 on the Scoville scale.

 

CHILTEPIN PEPPER (ALSO CALLED THE CHILE TEPIN)Chiltepin Pepper

The Chiltepin pepper is a wild pepper the grows primarily in Central America, Mexico, and the southwest U.S.A. This pepper is also called the Chile Tepin or just Tepin pepper; a better known name for it is the bird's eye pepper. The Chiltepin pepper is thought to be the hottest pepper in the world although it is not supported by its Scoville score. This pepper grows to almost a 3/8" in diameter, either round or slightly oval. It ranges in color from green to red (red being the hottest). Chiltepin ranges from 50,000 to 100,000 on the Scoville scale.

DATIL PEPPERdatil pepper

The Datil pepper is an exceptionally hot pepper that are similar to a habanero pepper but taste sweeter. The most common color for this pepper is yellow. The Datil pepper rates between 100,000 to 300,000 units on the Scoville scale.

FATALII PEPPERfatalii

The Fatalii pepper is a chili that orginates in central and southern Africa. It is describe as a pepper with a firery heat and fruity citrus taste. The peppers range in color from a pale green to a bright yellow. They grow between 2.5 and 3.5 inches long and up to 1.5 inches wide. Fatalii's range from 125,000 to 325,000 on the Scoville scale.

 

HABANERO PEPPERhabanero pepper

The Habanero chile pepper is one of the most intensely spicy chili peppers of the Capsicum genus. Unripe habaneros are green but there color at maturity varies from orange, white, red, brown, and pink. Habaneros reach sizes of 1 to 2.5 inches long and up to a 1.5 inches wide. They rate 100,000 to 350,000 on the Scoville scale.

 

JALAPENO PEPPERjalapeno

The Jalapeno pepper is a very popular medium heat pepper sold in North America. Jalapeno's are typically sold as green peppers but reach maturity when they turn red. When fully ripe they can be between 2 to 3.5 inches long. Another variation of a Jalapeno is a Chipotle which is just a smoked Jalapeno pepper. It rates between 2,500 to 10,000 on the Scoville scale, depending on how it was cultivated.

 

NAGA JOLOKIA PEPPER (ALSO CALLED BHUT JOLOKIA)naga jolokia

The Naga Jolokia pepper grows primarily in India and in 2007 was confirmed the hottest pepper in the world (beating the Red Savina, a cultivar of the habanero). Ripe peppers measure from 2.5 to 3.25 inches long and around 1 inch wide. It comes in a range of colors from green, orange, and red. It has a similar appearance to a Habanero, but its rougher, dented skin gives its own characteristics. The Naga Jolokia peppers ranges from 860,000 to 1,050,000 on the Scoville scale.

PIMENTO PEPPER (ALSO CALLED THE CHERRY PEPPER)pimento pepper

The Pimento pepper is a large, red, heart shaped pepper. Measuring between 3 to 4 inches long and up to 3 inches wide. The flesh of the pimento is sweet, succulent and more aromatic than that of the red bell pepper. Some varieties of the pimento type are hot, including the Floral Gem and Santa Fe Grande varieties. This pepper ranges from 0 to 1,000 on the Scoville scale.

 

SERRANO PEPPERserano

The serrano pepper is a chile pepper that orginated in the mountainous areas of Mexico. Unripe serranos are green, but the color at maturity varies. Common colors are red, brown, orange, or yellow. Serranos are very meaty and thus they do not dry very well. They are generally between 1 and 4 inches long and around ½ inch wide. Most Serranos rate between 10,000 and 20,000 on the Scoville scale.
