HOT AND SWEET CHILI
  • 2 lb ground beef
  • 1/2 each green and red capsicum peppers finely chopped
  • hot green chilli`s -- (8 to 12)
  • 1 onion finely chopped
  • 1 rib of celery very finely chopped
  • 2 14oz cans chopped tomatoes
  • 2 Tablespoons tomato puree
  • 1 can red kidney beans drained and washed
  • 1 teaspoon ground cumin
  • 2 teaspoons hot chilli powder
  • 2 Tablespoons pure honey
  • 1 rounded Tablespoon dark chocolate powder
  • 8 cloves garlic peeled and crushed
  • 1 vegetable stock cube
  • salt and pepper
    1. In a large heavy frying pan heat the oil and fry garlic for 1 minute then add onion celery and bell peppers reduce heat and sweet down until onion is soft and translucent.
    2. Add chilli peppers stir in about 1 minute increase heat and add meat then cook until all meat is light brown.
    3. Add spices,stock cube and tomatoes stir in and reduce heat allow to cook for 20 minutes stirring occasionally.
    4. Add tomato puree and season to taste.
    5. Add honey and chocolate.
    6. Stir and simmer for 10 minutes then serve.
