JERK RUB
  • 1 Onion, fine chopped
  • 1/2 c Scallion, finely chopped
  • 2 ts Ground thyme
  • 2 ts Salt
  • 1 ts Allspice
  • 1/4 ts Ground nutmeg
  • 1/2 ts Ground cinnamon
  • 4 Hot peppers, finely ground
  • 1 ts Black pepper
    1. Mix all ingredients together and blend to make a fine paste.
