SAUTEED POTATOES AND PEPPERS
  • 2 lbs potatoes, finely chopped
  • 3/4 lbs seeded green peppers      
  • 7 tbsp cooking oil
  • 2 small onions, finely chopped
  • ½ tsp fenugreek seeds
  • 1 tsp white cumin seeds
  • 1 tsp crushed garlic
  • 1 tsp haldi
  • 1 tsp red chilli powder
  • 1/2 lbs tomatoes, finely chopped    (1/2 pound)
  • ½ cup fresh coriander, finely chopped
  • salt to taste
    1. Heat the oil in a saucepan and brown the onions.
    2. When they are golden put the fenugreek and cumin seeds and stir until they turn a shade or two darker.
    3. Put the garlic, haldi, red chilli powder and salt and stir together for a few minutes.
    4. Put the chopped potatoes and green peppers and simmer over low heat in a covered pan.
    5. After 5 minutes, put the tomatoes, replace the lid and cook until both the potatoes and peppers become tender.
    6. Stir in the fresh coriander before removing from the heat to serve.
