| OSTRICH MEATLOAF |

- Thoroughly blend all ingredients. Press into 9x5 loaf dish.
- Bake uncovered in oven for one hour at 350f
- Top the loaf with ketchup the last 15 min of cooking
- Slice the other half of the bell pepper and use to arrange on top of the loaf.
- Place fresh mint leaves on top of the loaf directly before serving.
