CHICKEN FAJITAS
  • 1 lb. chicken, skinless, boneless, cut into strips
  • 8 flour tortills
  • 2 Tbsp. oil
  • 1 medium sweet green pepper, seeded and cut into 1/4" slices
  • 1 large onion,halved and cut into 1/4" slices
  • 2 medium tomatoes, halved, seeded and cut into thin wedges
  • Avocado dip, picants sauce, sour cream for toppings
  • Marinade

  • 1/2 cup. Italian dressing
  • 1/4 cup. fresh lime juice
  • 2 Tbsp. light brown sugar
  • 1/4 tsp. ground coriander
  • 1 clove garlic,finely chopped
  • 1/2 tsp. salt
  •  

    1. To make marinade stir all marinade ingredients together
    2. Pour marinade over chicken in bowl. Chill, covered, overnight. Wrap tortillas in foil. Warm 350 for 10 min. Heat oil in large skillet over med-high heat. Remove chicken from marinade. Stir-fry meat. Add pepper and onion; stir-fry 3-5 min. Add tomatoes; stir-fry 2 min. Bring skillet to table so everyone can fill a tortilla with chicken and vegetables and choose a topping.
